Seeds for Success (Spring 2021)

With the more traditional image of starving hunger in retreat, a new nutritional antagonist is taking its place. Particularly in the US, more and more people suffer from obesity and malnutrition. Although people suffering from hidden hunger consume plenty of calories, they do not consume the “right” calories, leaving their bodies with many of the same deficits undernourished people face. For many, their suffering is a result of a combination of factors, including time and budgetary constraints, convenience, and a lack of information. The latter is especially prevalent in malnourished children. Whether consuming too few or too many calories, malnourished children frequently lack the information necessary to make informed decisions about their food choices.

The outputs of our project will be a resource guide discussing nutrition and sustainability and pointing students to appropriate community resources, should they wish to stay involved in urban gardening and food security initiatives. In addition, we hope to provide students with take home kits after hosting a series of seminars with them. These seminars will focus on the importance of home grown produce to promote food security and provide practical instruction on planting the seeds. We hope to collect progress updates from students and compile their results into a project wall that the school can post to garner awareness of our mission among students.
